Carrots & Potatoes Roasted w/ Onion

We love this! Great way to have potatoes as a side, but with some veggies. The original recipe is here, but I add a few ingredients.

Yields 4 servings.

Ingredients:
5 large carrots, cut diagonally into 1/2 inch slices (or use 3/4 bag of baby carrots)
4 medium white or red potatoes, cut into bite-sized chunks
1 medium vidalia onion, cut into eighths
2 tablespoons butter
2 tablespoons olive oil
Salt & Pepper
Garlic Powder
Italian Seasoning

Directions:
1. Preheat oven to 425 degrees.
2. Add carrots, potatoes, and onion in 9x12 glass dish.
3. Coat with Olive Oil and season generously with salt and pepper, garlic powder and Italian seasoning.
4. Mix well. Add Butter to top.
5. Cover pan with aluminum foil and bake for about 1 hour.
