Amy's Pasta Salad
Recipe from Kevin's sister, Amy
1 box Tri-color pasta
1 red pepper, chopped
1 chopped head broccoli, slightly cooked (steam in microwave w a little water for a few min)
Cherry Tomatoes- 1 box and chopped in half
1 red onion-chopped
Kens italian dressing
Shredded mozzarella
1. Chop vegetables
2. Cook pasta-al dente-do not overcook. Let pasta cool.
3. Combine chopped veggies and pasta in large bowl.
4. If you want to eat the pasta salad over a few days, add dressing and cheese per order. Or drizzle Ken's dressing over pasta (to taste) and sprinkle shredded mozzarella on top.
