Pineapple pico de gallo

Serve with chips, on top of white fish/chicken or in a lettuce wrap

Tip: tastes better when made 1-3 hours ahead of time and flavored have time to marinate.

Ingredients
  • Juice of 1 lime
  • 1 c. chopped fresh pineapple cut into tidbits size pieces. We get precut from Publix.
  • 1 c. chopped tomatoes (I used cherry)
  • ⅔ c. sweet yellow onion diced
  • ½ c. cilantro chopped
  • 1 jalapeno seeded and diced (less or more depending on your spice preference)
  • Salt and pepper to taste
Instructions
  1. Combine all of the ingredients and refrigerate in an air tight container. Stores well refrigerated for 3-5 days. Serve with chips for a snack or with a grilled chicken breast for a healthy dinner.
