Publix Apron's Chicken Gnocchi

The girls said this was the best publix apron recipe to date!

Ingredients

1 tablespoon fresh rosemary, finely chopped
1 lemon, for zest/juice
3 slices bacon, coarsely chopped
2 tablespoons flour
1 tablespoon salt-free Italian seasoning
1 teaspoon kosher salt 
1/2 teaspoon pepper
Large zip-top bag
2 lb boneless, skinless chicken thighs 
1 cup fresh garlic cloves
1 (8-oz) package trinity mix (fresh diced onions, bell peppers, celery)
1 cup unsalted chicken broth (or stock)
1 (16-oz) package gnocchi pasta

Steps

  1. Chop rosemary. Zest lemon (1 teaspoon); squeeze for juice (2 tablespoons). Chop bacon. Combine flour, seasoning, salt, and pepper in bag. Add chicken to bag, seal tightly and shake to coat (wash hands).
  2. Preheat large, nonstick sauté pan on medium 1–2 minutes. Place bacon in pan; cook 4–5 minutes, stirring occasionally, or until crispy. Remove bacon and set aside, leaving bacon fat in pan.
  3. Add chicken and garlic to same pan; cook 2–3 minutes on each side or until browned. Transfer chicken and garlic to slow cooker. Combine rosemary, zest, juice, trinity mix, and broth; pour over chicken.
  4. Cover and cook on HIGH for 2 1/2 hours (or LOW for 4 1/2 hours). Gently stir gnocchi into slow cooker; cook 25–30 more minutes or until gnocchi are tender and chicken is 165°F. Sprinkle cooked bacon over top. Serve.
