Publix Apron's Chicken Gnocchi
The girls said this was the best publix apron recipe to date!

1 lemon, for zest/juice
3 slices bacon, coarsely chopped
2 tablespoons flour
1 tablespoon salt-free Italian seasoning
1 teaspoon kosher salt
1/2 teaspoon pepper
Large zip-top bag
2 lb boneless, skinless chicken thighs
1 cup fresh garlic cloves
1 (8-oz) package trinity mix (fresh diced onions, bell peppers, celery)
1 cup unsalted chicken broth (or stock)
1 (16-oz) package gnocchi pasta

Ingredients
1 tablespoon fresh rosemary, finely chopped1 lemon, for zest/juice

1/2 teaspoon pepper

2 lb boneless, skinless chicken thighs
1 cup fresh garlic cloves
1 (8-oz) package trinity mix (fresh diced onions, bell peppers, celery)
1 cup unsalted chicken broth (or stock)
1 (16-oz) package gnocchi pasta
Steps
- Chop rosemary. Zest lemon (1 teaspoon); squeeze for juice (2 tablespoons). Chop bacon. Combine flour, seasoning, salt, and pepper in bag. Add chicken to bag, seal tightly and shake to coat (wash hands).
- Preheat large, nonstick sauté pan on medium 1–2 minutes. Place bacon in pan; cook 4–5 minutes, stirring occasionally, or until crispy. Remove bacon and set aside, leaving bacon fat in pan.
- Add chicken and garlic to same pan; cook 2–3 minutes on each side or until browned. Transfer chicken and garlic to slow cooker. Combine rosemary, zest, juice, trinity mix, and broth; pour over chicken.
- Cover and cook on HIGH for 2 1/2 hours (or LOW for 4 1/2 hours). Gently stir gnocchi into slow cooker; cook 25–30 more minutes or until gnocchi are tender and chicken is 165°F. Sprinkle cooked bacon over top. Serve.
