Turkey Zucchini Pesto

My tweaks and version below:

Ingredients

  • 1 lb ground turkey
  • 1 zucchini, cut into thin slices 
  • 1 medium onion, finely chopped (I use frozen chopped)
  • 1 pint grape tomatoes, cut in halves
  • salt
  • Parmesan cheese
  • Olive Oil
  • Pepper
  • 1 cup Basil - usually need 2 packs 
  • 1/8 cup Pine Nuts 
  • Original Ms. Dash
  • 1 garlic clove 

Instructions

  1. Preheat large ceramic non-stick skillet on medium heat and swirl oil to coat. Add onion and cook for 3 minutes, stirring occasionally.
  2. Add ground turkey and sprinkle Ms. Dash over turkey. Then cook for 5-7 minutes, constantly breaking into pieces and stirring.
  3. While turkey is cooking make pesto. In a blender add 1 cup basil, 1 garlic clove, 1/8 cup pine nuts, 5.5 tbsp olive oil, 1/4 cup Parmesan cheese, 1/8 tsp pepper, 1/8 tsp salt. Blend until smooth. 
  4. Add zucchini, stir and cook for another 3-4 minutes, stirring occasionally.
  5. Turn off heat, add tomatoes and pesto, then stir. Garnish with more Parmesan cheese if desired.
