Turkey Zucchini Pesto

Ingredients
- 1 lb ground turkey
- 1 zucchini, cut into thin slices
- 1 medium onion, finely chopped (I use frozen chopped)
- 1 pint grape tomatoes, cut in halves
- salt
- Parmesan cheese
- Olive Oil
- Pepper
- 1 cup Basil - usually need 2 packs
- 1/8 cup Pine Nuts
- Original Ms. Dash
- 1 garlic clove
Instructions
- Preheat large ceramic non-stick skillet on medium heat and swirl oil to coat. Add onion and cook for 3 minutes, stirring occasionally.
- Add ground turkey and sprinkle Ms. Dash over turkey. Then cook for 5-7 minutes, constantly breaking into pieces and stirring.
- While turkey is cooking make pesto. In a blender add 1 cup basil, 1 garlic clove, 1/8 cup pine nuts, 5.5 tbsp olive oil, 1/4 cup Parmesan cheese, 1/8 tsp pepper, 1/8 tsp salt. Blend until smooth.
- Add zucchini, stir and cook for another 3-4 minutes, stirring occasionally.
- Turn off heat, add tomatoes and pesto, then stir. Garnish with more Parmesan cheese if desired.
