Turkey Taco Salad

Ingredients 

1lb ground turkey (I use 99%)
1 Taco seasoning (McCormick 30% less sodium)
1 bag shredded lettuce
1 large tomato
1/4 purple onion
Cilantro 
1 Plain 5.3oz Greek yogurt (Siggi’s is my favorite)
1 lime 
Optional: avocado or rinsed, chilled black beans

Steps

- brown ground turkey until just cooked through (do not overcook). When turkey is done follow taco seasoning instructions. I find it best to make sure the ground turkey is broken up into smallest pieces so it absorbs the most flavor.
- while ground turkey is cooking, chop tomato and onion into small pieces and place in a bowl. 
- Use scissors to cut cilantro into small pieces (just the leaves not the stems). Use as much as you want, I usually use about a 1/4 cup. Add to onions and tomato in the bowl.
-  roll your lime back and forth on the counter to release the juices. Cut into 4 pieces and squeeze the lime juice over the tomato, onion, cilantro mixture. Mix gently together and place in fridge until it is time to eat. This is now homemade Pico de Gallo.
- take your Greek yogurt and cut more cilantro (the more the better in my opinion but probably 1/8-1/4 cup) into the Greek yogurt. Stir to combine.
- place half of the shredded lettuce on your plate. Add at least 4oz of ground turkey on top. Add about half of the pico de Gallo on top of the turkey. Add about half of the Greek yogurt mixture on top. Enjoy!
