Barbacoa Beef - Crockpot

Adjustments:
- no cumin, so doubled paprika
- 2 lbs meat
- 32oz beef stock - unsalted to reduce sodium
- remove shredded meat from liquid and place in kitchen aid. Then broil meat on a cookie sheet for 3-5 min to crisp up
- served: 1 diced and seeded jalapeño, 1 chopped tomato, 1/4 diced red onion, chopped cilantro, Greek yogurt w cilantro mixed in, 2 cut up limes, Iceburg lettuce shreds, cilantro lime 90 second rice, warmed tortillas
