Roasted Brussel Sprouts with Feta and Cranberries
Ingredients:
1.5lbs Brussel sprouts
dried cranberries
feta cheese
- 1 tablespoon honey
- 1/2 tablespoon dijon mustard
- 1/4 teaspoon fine sea salt + extra to lightly coat
- 1/4teaspoon freshly crushed black pepper finely ground + extra to lightly coat
- 1/4 teaspoon garlic powder
- 1/8 cup balsamic vinegar
- 1/3 cup olive oil + extra to lightly coat
Instructions:
1. Preheat oven to 400*
2. Cut Brussels in half lengthwise and cut off ends.
3. Coat Brussels in a little olive oil to lightly coat them and sprinkle on a light mix of salt and pepper. Toss.
4. On a large baking sheet, flip all Brussels over with the cut side down (they crisp up better this way).
5. Cook for about 18-20 minutes.
6. In a small mixing bowl, whisk together the honey, balsamic, mustard, salt, pepper and garlic. Add the oil and whisk thoroughly to combine. Continue whisking until the dressing is fully emulsified.
7. When Brussel timer goes off, pull out of oven and drizzle about 2/3 of the dressing on the Brussels and toss to coat.
8. Cook for another 3-5 minutes.
9. Take out, sprinkle with feta and cranberries.
